Love.ly.food is back with a new recipe for Asian food!
I was visiting my parents a few days ago in the Paris suburbs and decided to start a sort of culinary training course with Mum for the duration of my stay. Among the delicious dishes she prepares, one dessert stands out from the rest, and I ask her to make it every time I go back to their house. After the famous Cambodian satay fondue that was a hit on my love.ly-south Instagram, I’d like to share with you the recipe for a Vietnamese dessert made with tapioca balls with banana and coconut milk. It’s a very quick and easy recipe to make. Even for people who don’t cook, this is a recipe made for you!
Recipe ingredients (serves 4)
- 430 ml water
- 60g tapioca balls
- 3 bananas, sliced into rounds
- 4 tablespoons sugar (I use 2 tablespoons brown sugar)
- 1 pinch of salt (not compulsory)
- 130 ml coconut milk on the side (I prefer to put it on the side as some people prefer to enjoy this dessert without the coconut milk)
Recipe for tapioca pearls with banana and coconut milk
- Add the 430ml of water to a saucepan and bring to the boil
- Once the water is boiling, add the 60 grams of tapioca pearls and stir for 5 minutes
- Add the banana pieces and cook for a further 5 minutes
- Add the sugar, coconut milk and a pinch of salt and stir for 30 seconds
- Leave to rest for 1 to 2 hours (the longer you leave it to rest, the more compact the mixture will be and the bigger the balls will be). This is a delicious dessert that can be eaten cold.
